The most common mistake people make is trying to light their entire kitchen with one fixture centered in the ceiling. You're better off with a blended solution.
Once your basics are in place, you can have fun selecting the finishes for each aspect of your kitchen remodel: cabinetry colors/materials, appliance colors, paint, tile, flooring, etc.
